Ingredients

  • 2 cups fresh spinach leaves (about 60g)
  • 1 cup shredded cheddar cheese (about 115g)
  • 1 cup shredded mozzarella cheese (about 115g)
  • 4 slices beef bacon, cooked and crumbled
  • 1 cup cooked white rice (about 185g)
  • 1/2 cup chopped onion (about 75g)
  • 2 cloves garlic, minced
  • 4 large eggs
  • 1/2 cup almond milk (about 120ml)
  • 1/2 teaspoon salt (about 2.5g)
  • 1/4 teaspoon black pepper (about 0.6g)
  • 1 tablespoon vegetable oil (about 15ml)


Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Heat olive oil in a large skillet over medium heat.
  3. Add chopped onion and cook until translucent, about 5 minutes.
  4. Add minced garlic and cook for an additional 1 minute.
  5. Stir in fresh spinach leaves and cook until wilted, about 2-3 minutes.
  6. In a large bowl, beat eggs and mix with milk, salt, and black pepper.
  7. Add cooked white rice to the egg mixture and stir to combine.
  8. Stir in cooked onion, garlic, and spinach mixture.
  9. Add crumbled turkey bacon to the mixture and stir well.
  10. Mix in shredded cheddar cheese and mozzarella cheese.
  11. Grease a baking dish with a little olive oil.
  12. Pour the mixture into the prepared baking dish, spreading evenly.
  13. Bake in the preheated oven for 25-30 minutes or until set and golden.
  14. Let the casserole cool for a few minutes before serving.
